ETHIOPIA YIRGACHEFFE

This honey-process coffee from the Yirgacheffe region receives a two-day in-cherry fermentation, creating subtle floral notes (orange blossom!) and a juicy acidity. Grown at 1800 masl, this coffee is a collection from smallholder farmers. This coffee is excellent and complex on pour-over and cold brew methods. A classic sweetness reminds us of the peach ring candy.

“The fragrance while grinding and brewing this coffee is very fruit-forward. Pour-over really brings out the sweet peach-ring flavor minus the artificial candy notes. Cold Brew exhibits a tartness like fresh strawberries right away. It ends up being an interesting and amazing representation of Yirgacheffe,” —Brad P., DOMA Coffee Lab.

Brad’s recipe: For the pour over, I used an Origami brewer with a Kalita flat bottom filter. I used a 1:16 ratio with water at 206*, dosing about 100 grams per pour after the bloom, ending at about four minutes and 30 seconds.
