Susie at Sweet Dreams Bakery surprised the gang at DOMA with a custom-made, delicious, DOMA themed cake just because.  She does all kinds of amazing cakes, cookies and other bakery delights…and DOMA espresso.  Harry reminded me that he is currently accepting all gifts on behalf of DOMA (but he makes no guarantees that they will make it back to headquarters).

Cheese-fest 2009 @ Moscow Co-op

The 2nd annual Cheese-fest at the Moscow Co-op and we were fortunate enough to be invited to brew up some coffee. This event is amazing–the best cheese producers from the Inland Northwest handing out samples–does it get any better?

Greg in the Islands – part 2

Coffee cherries on the tree–you can see how they ripen at different stages.  This is why great quality comes from hand picking and not from stripping the cherries all at once.  Over ripe cherries put a sour taste in the coffee.  Under ripe can make the flavor bitter, astringent, and metallic–even rotten fish.

This is the processing station at Greenwell farm.  After the cherries are de-pulped they undgo a dry-fermentation to remove the mucilage from the parchment. Microbes actually eat the pectins and sugars.

After fermentation the coffee is placed on a drying patio and raked until it dries to 12% humidity.  In this picture the wet cherries are being placed in the wheelbarrow and dumped on the patio.  They have a retractable roof system like Safeco Field that they can cover the parchment with if it begins to rain–a daily event at 4:00 PM inKona.

Our own Survivor (think Eye of the Tiger) was caught on camera in Hawaii.  Greg was seen at Hula Daddy Kona Coffee on their live Web Cam and in the cupping room.

He got a chance to cup with roastmaster Miguel Meza and learn about Kona specialty coffee.

I’m sure he will be sad that he missed the 3 days of record low temperatures here in beautiful Idaho.  Oh, well.

Junk 2 Funk

Junk2Funk was great fun and anyone who wasn’t there should plan on being a part of this annual benefit next year.
KEA has mixed fundraising with creative art in this fantastic trashion show hosted at O’Shays in Coeur d’Alene.

The unique handmade outfits are a statement to the talent and creativity residing in our community.
Two photographers captured the evening:  Ben Tobin and Monty Doom.

Shelly Croswhite went dumpster diving behind a drive-thru and came up with a ballet skirt of jugs…add custom paper flowers and pages from the phone book for a “floral little number.”  Modeled by Mindy Haze.
